LAVORAZIONE

I peperoni rossi “a ciliegia” vengono messi a macerare con l’aceto e successivamente riempiti con un impasto di tonno, acciughe, pomodoro secco, capperi e fecola di patate. Manualmente si procede, poi, a mettere gli stessi nei vasetti di vetro. Dopo, avviene l’aggiunta dell’olio fino a colmare il vasetto. Chiusura a mano e Pastorizzazione.
